Chickpeas, chia seeds, gluten free oat flour and dark chocolate chips, make this Vegan Blondies recipe a healthy dessert you can make in under an hour.
Blondies are the often over looked cousin to brownies and can be just as unhealthy of a dessert. But by substituting a few ingredients we create Vegan Blondies. Chickpeas give these blondies a creamy moist texture replacing the traditional role of butter or oil. A chia egg helps bind the ingredients and adds protein and fat without the saturated fat and cholesterol of a chicken egg.

Why are chickpeas a great ingredient in baking? Chickpeas are a nutritional powerhouse high in protein, iron, and zinc, and contain nutrients found only in vegetables. According to Nutritionfacts.org, “[The Institute for Cancer Research’s] summary cancer-prevention recommendations is to eat whole grains and/or legumes—beans, split peas, lentils, or chickpeas—with every meal. Not every week or every day. Every meal.” Having them in a delicious desert is a great way to check this off your list.
How do you make a Chia Egg?
First, grind 1 tablespoon of whole chia seed in a spice grinder. Next, in a small bowl add 4 tablespoons of warm water and let sit for 15 minutes until firm. Additionally, as a one to one substitute, you can use flax seed instead.
How do you make your own Oat Flour?
Making Oat Flour is easy by blending uncooked oatmeal in a high speed blender or a spice grinder. For a richer or grain free blondie, substitute almond flour one for one.
How do you make your own Sweetener?
Maple syrup makes a sweet treat. But unless you live in New England, you probably can’t make your own maple syrup. You can however, make your own whole food sweetener out of dates. Once you make it yourself you will always have a sweetener you can substituted one for one. in most recipes.

Chickpea Chocolate Chip Blondies Gluten Free
Ingredients
- 1.5 cups Cooked Chickpeas (1 can) Drained
- 1/3 cup Peanut Butter
- 1/3 cup Maple Syrup
- 1/4 tsp Baking Soda
- 1/4 tsp Baking Powder
- 1/4 tsp Sea Salt
- 1 Chia Egg
- 1/3cup Oat FLour
- 1/2 cup Chocolate Chips
Instructions
- Preheat oven to 350F
- Make chia egg by grinding a Tbs of whole chia seed in a spice grinder. In small bowl add 4 Tbs of warm water. Mix well and let sit 15 minutes.
- Line a 9x9 inch brownie pan with parchment paper. Crushing the paper into a ball before you line the pan will help the paper to fit into the corners better.
- Drain and rinse chickpeas. Pat dry with a clean tea towel. to remove as much moisture as possible.
- Combine in food processor all ingredients except the oat flour for one minute or until all ingredients are well mixed. Do not over blend.
- Add flour and blend for an additional 30 seconds, scraping down the side if need be.
- Stir in 1/3 cup chocolate chips, reserving remaining.
- Spread batter evenly in lined baking pan and place remaining chips on top. Pressing lightly to ensure good contact with the batter.
- Bake for 20-30 minutes depending on your oven. Once the batter comes away from the sides and a tooth pick in the middle comes out clean.
- Cool for 10 minutes in the pan to firm.
- Let cool for an hour to ensure a firm blondie.
- Refrigerate any leftovers.
